A fun baked treat for enjoying with coffee- made with whole wheat flour and greek yoghurt so you can enjoy your pastries guilt free!
Ingredients
- 1 ½ cups whole wheat pastry flour or whole wheat flour
- ½ cup whole wheat flour
- 1 tablespoon baking powder
- 3 tablespoons turbinado (raw cane) sugar, plus more for sprinkling on top
- ⅛ teaspoon salt
- 5 tablespoons cold unsalted butter
- Zest of 1 lemon
- 1 cup blueberries
- ½ cup plain noosa Greek yogurt
- ½ cup Morning Fresh milk(any kind!)
Directions
- Step 1
- Preheat oven to 425F
- Step 2
- Combine dry ingredients
- Step 3
- Add in blueberries and lemon zest
- Step 4
- Gently mix in milk and yoghurt. It will get more difficult as you mix so don’t be afraid to use your hands!
- Step 5
- Make a circle with your dough about 1 inch thick. Cut circle into 8 slices. Top with sugar if you’d like!
- Step 6
- Place on baking sheet and bake for 15 minutes or until golden brown.
